Ingredients

2 Fuyu persimmons, thinly sliced

1 large Asian pear, cored and thinly sliced

1 head radicchio

2 ounces soft cheese, such as marinated feta, blue, or goat cheese

¼ cup toasted hazelnuts, roughly chopped

Fresh mint, for garnish

For the dressing:

1 teaspoon Dijon mustard 

1 tsp raw honey

3 tablespoons olive oil

1 tablespoon sherry vinegar

1 tablespoon fresh lemon juice

salt and freshly ground black pepper, to taste

Instructions

To prepare the dressing, whisk all ingredients together in a small bowl until well combined. Season with salt and freshly ground black pepper to taste.

To assemble, tear radicchio leaves from the head and arrange on a large platter, sliding pieces of persimmon and pear between each leaf. Crumble the soft cheese of your choice (we used marinated feta) over the salad, then garnish with torn fresh mint leaves and a sprinkle of toasted hazelnuts.

Pour over with the dressing and serve.
