Apple Fritters with Japanese Rice Flour (Gluten-Free)

Crispy, hot and rolled-in cinnamon and sugar, these fritters will—we promise—disappear. The recipe was created by The Culinary Institute of America.

Ingredients

Makes 25 pieces

1/4 cup (50g) egg yolk

1/4 cup (50g) whole eggs

2 1/2 cups (450g) sour cream

1/2 cup (120g) whole milk

2 TBS (25g) vegetable oil

1 teaspoon (6g) vanilla extract

3/4 cup (150g) granulated sugar

3 2/3 cups (525g) Japanese rice flour*

2 teaspoons (8g) salt (8g)

1/2 teaspoon (2g) nutmeg

1 TBS (15g) baking powder

1 teaspoon (5g) Xanthan gum

2 Granny Smith apples, peeled and small-diced

1 cup (200g) granulated sugar

2 teaspoons (5g) cinnamon

DIRECTIONS

1. Preheat oven at 375F

2. Combine all wet ingredients and whisk until smooth or 2 to 3 minutes.

3. Combine granulated sugar, salt, nutmeg, baking powder and xanthan gum.

4. Mix wet and dry ingredients together with a paddle attachment on a stand mixer on medium speed for about 1 minute.

5. Add the peeled and diced apples and mix them at medium speed for 30 seconds. Rest the batter for 45 minutes to allow the starch to hydrate.

6. Using 1 ounce or #40 scoop, portion batter into 350°F Frying oil.

7. Flip fritters halfway through the frying process.

8. When golden brown on both sides, after about 5 minutes, remove from the oil and finish in the oven for1 to 2 minutes or until fully cooked.

9. Combine cinnamon, salt and sugar. toss hot fritters in cinnamon sugar mixture wile still hot from the oven.​
